Job Description
Position title: Executive Sous Chef
Key pillars: The Executive Sous-Chef will provide strong support to the Executive Chef and motivate and engage team of approximately 20 chefs in the kitchen. Responsibilities include, but are not limited to:
1) Visually inspecting all food product to be served to ensure they all meet the quality standards set out be Departmental and Hotel management;
2) Participating in the process of directing all culinary associates including hiring, training scheduling and evaluating.
3) Ensuring proper receiving and storage of food products so as to comply with health department regulations;
4) and adherence to all cost and quality control procedures.
5) Responsible for writing, maintaining and updating all menu specifications, recipes and pictures, production forecast, and ensure that the same are being followed.
6) Deep knowledge and compliancy of the HACCP standards, also all related activities of Health and Safety in the Kitchen department (training certificate).
The ideal candidate for this role is efficient, enjoys cooking leading the development of associates, has a positive demeanor and excellent supervisory skills.
Job knowledge/skills:
a- Candidate must have very good cooking and food presentation skills, for 3 to 5 continuing years.
b- Experience in the international cuisine including Mediterranean, Middle-east, Asian and local cuisine is desirable.
c- Displays strong skills in effective planning, organization and team motivation, also team supervision skills.
d- Preferable will be the candidate a culinary school graduate.
e- Experienced in similar position in a big catering outlet (five star hotel preferable).
f- Speaks good Albanian, English languages (Italian is optional).
g- Strong sense of responsibility and self-motivation.
h- Competent in use of Microsoft office programs.
Education: High school culinary degree and above.
Experience required:-At least 3 years’ experience in similar position in a big catering outlet (5 star hotel preferable) – essential.
